My name is Seidy and I am originally from Mexico; I have lived in the States for over ten years. Growing up in a coffee producer country I never thought coffee would become my life.
In 2018 I made the decision to jump in full into the coffee world. My husband and I opened the doors to our first specialty coffee shop in Vancouver WA The Coffee Lab with the goal of sharing our passion for specialty coffee and everything about the incredible journey of coffee from farm to cup. In 2020 we opened the doors to our second location; The Gastro Cafe.
I never thought coffee would give me everything that has given me. I have a couple of independent coffee projects (The Cold Brew Fest & A cup Quest).
I look forward to keep growing in the coffee world and serve as an example to others while sharing about origin and everything that happens from farm to cup.
When I am not working coffee; you will find me cooking (I have a bachelors in Gastronomy). Spending time with my xoloitzcuintle dog or traveling around the world with my husband are other of my big passions.
